And Now for Something Completely Different

So I’ve been pretty bad at updating as of late. Work got a little crazy, and there was that whole seeing family and friends thing that sort of took over break. Anyway, another one of my favorite things to do, other than wear clothes and take pictures of myself is baking. I love taking recipes I find online and making them healthier and more to my taste. I often try for vegan, but sometimes (like this time) that just didn’t happen. The shredded carrots and pineapple give them lots of texture, and I used one of my favorite tricks namely using yogurt instead of oil. They’re filling and healthy, and I’d recommend anyone to bake or eat em, cause they’re delicious.

1/2 cup white flour

1  1/2 cup whole wheat flour

2 tsp baking soda

1 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

3/4 cup white sugar

3/4 cup brown sugar

1 cup yogurt

3 eggs, beaten

1 tsp vanilla extract

3/4 cup oats

1/2 cup cranberries

2 cups shredded carrots

1 cup pineapple chunks

1. Preheat the oven to 350

2. Mix the dry ingredients (the ones up to the nutmeg) in a large bowl. I only actually used one big bowl, as the rest of the ingredients just went in there as well

3. Beat 3 eggs in a small bowl

4. Make a well in the center of the dry ingredients and add the sugars, the eggs, the yogurt and the vanilla

5. Fold in the rest

6. Put the batter in the tins and bake for 25 minutes (or standard muffin time is around that, I never set a timer, preferring to check on them periodically until they look right to me) This time I have no idea how long I baked them for. A friend came over and I didn’t remember I had them in the oven until my Father asked when he would get to try one. I ran to take them out and they were fortunately unharmed, and actually maybe benefitted from the extra time which resulted in a rather pleasantly crispy caramelization on top.
